Alaskan Salmon Bake for the NACD PAC/SW Regional Meeting

We had the opportunity to travel to Anchorage, Alaska to prepare an Alaskan salmon bake for the Pacific/SW Regional Meeting of the National Association of Conservation Districts (A 501(c)(3) nonprofit) in September of 2024. The event was put on by Alaska Village Initiatives, a non-profit that is focused on food security and agriculture for Alaskan Native villages. We sourced our ingredients locally upon arriving in Alaska and the sockeye salmon was donated from a local village and created our menu around what was available for the 200 attendees. Our sources included Arctic Harvest and Grow North, an urban farm managed and tended by individual refugee women.

- Chicken or salmon belly salad featuring local hydroponic basil, or Korean-inspired Tofu sandwiches
- Organic Apple
- Moose-lasses Cookie (GF)
Salmon Bake
- Sockeye salmon or chicken breast marinated in a Korean-inspired gf sauce with local kelp chili crisp
- Jasmine Rice
- Local cabbage slaw featuring ponytail radish kimchi
- GF Blueberry cake with a dulce de leche apple compote featuring local fruit and dairy
