Switch Bakery Stuffing Recipe
5-7 cups of dried stuffing (3 packages of Switch Bakery dried stuffing)
3 tbsp, butter, olive oil, avocado, or coconut oil
2 stalks celery
1/2 onion, chopped
1/2-1 cup stock (vegetable, turkey, or chicken)
2 eggs, beaten
1/2-1 tsp sea salt (see note at the bottom!)
1/4 tsp black pepper
Fresh parley, sage, thyme, marjoram
Melt the butter in a skillet over medium heat. Add onion and celery and cook until the onion is translucent. Your Switch Bakery stuffing has been mixed with a bit of salt and herbs, but you can always add more fresh herbs. Transfer to a large bowl and add in any additions you might have and mix to combine. Add the bread cubes.
Whisk the eggs and stock together and pour over the mixture. Toss gently with your hands to make sure everything gets well covered. Put stuffing in a casserole or other baking dish and bake in a 400 degree oven for about 15-20 minutes until the top is browned.
Some great additions to your stuffing include pecans, pine nuts, dried fruit (like apricots), apples, mushrooms, or fennel. You can also add cooked sausage, oysters, or rendered bacon. If you are adding vegetables, fruit or nuts, add them at the skillet phase to cook until most of the moisture is released or the nuts are toasted.
As mentioned, your mix is already slightly salted, so be careful with the salt level! Before adding additional salt, I would cook off a tablespoon of your finished mixture and then season, if needed.
